When I was up visiting my grandfather I acquired a recipe for a cake, a delicious cake. It can be frozen, and it tastes exactly the same as it does fresh baked. My only advice is to actually chop the nuts, I just broke them into fourths. I like chunky nuts what?


Apple Walnut Pecan Ring Cake
1 cup butter
2 cups sugar
3 eggs
3 cups sifted all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon mace
2 teaspoons vanilla
3 cups chopped apples
2 cups chopped nuts of choice

Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Mix and sift flour, baking soda, salt, cinnamon & mace; add gradually. Stir in vanilla, apples & nuts. Batter will be stiff (and won't really stick to the apples).

Spoon into greased & floured 10-inch tube pan. Bake at 325 for 11/2 hours. Let cool in pan 10 minutes. Remove to rack.
